Chocolate Covered Popcorn

Sweet and salty is one of my favorite flavor collaborations.  I usually get my fix through salted caramel, chocolate covered peanuts or the always delicious French fry dunked in a malt (don’t knock it until you have tried it, at which point I’ll be shocked if you still knock it).  I recently saw a recipe for chocolate covered popcorn – yum!  I could taste it already.

1.  Start by popping a batch of your favorite popcorn.  Don’t forget the salt!  Lay a sheet of parchment paper or waxed paper on a cookie sheet and spread the popcorn into a single layer.

2.  Melt some chocolate over low heat, stirring almost constantly.  I used Wilton candy melts, but you can use whatever brand you prefer.  For this occasion I used red and yellow to go with the Mickey Mouse theme.  Any color can be used to reflect the occasion (green for St. Patty’s day, school colors for graduation, etc.)

3.  Drip the melted chocolate on top of the popcorn and stir to mix the chocolate evenly through the popcorn.

4.  Let the chocolate harden before removing from the baking sheet.  It should only take about 15 minutes to completely harden.  If you are mixing multiple colors of popcorn it is important to make them separately, let cool and then mix the chocolate covered popcorn together.  For an extra touch of something special, you could add sprinkles to fit the occasion.

I put the red and yellow popcorn into red and white polka dot cupcake liners and served with some checks mix decorated with red and yellow M&M’s.

    We do malts and fries too. I get it. I also LOVE this idea. I think I will make school colored ones for Meet and Greet in August.

    1. Microwave popcorn : ) I’m totally kidding! I unfortunately don’t have any tips on that. We ended up getting a hand-me-down popcorn maker from my parents, which keeps everything pretty well contained. I haven’t made popcorn on the stove since. I’ll let you know if I find anything out 🙂
