{Kid Friendly} Jack O’Lantern Stuffed Peppers

  • 4 Orange Bell Peppers
  • 1 lb. of lean meat (either ground beef or turkey)
  • 1 can of Manwich
  • 1 cup of corn
  • 1 small onion – optional
  • Shredded mozzarella cheese to taste – optional
  • Jalapeno to taste – optional

Jack O’Lantern Pepper Shells

  1. Cut the top off the peppers
  2. Clean out seeds from inside 324
  3. Use a small paring knife to carve a Jack O’Lantern face in  the pepper 327
  4. Place in oven safe dish 331

Sloppy Joe Filling

Preheat oven to 425°

  1. Brown meat over medium heat
  2. Drain fat
  3. Add corn and Manwich
  4. Cover and simmer for 5 minutes
  5. Fill the Jack O’Lanterns with filling, cover with aluminum foil and bake at 425° for 45 minutes

I generally fill 2 Jack O’Lantern Shells for the kids and then add onion and jalapeno to the remaining filling and simmer a few more minutes.

If desired, remove shells from oven after 30 minutes, top with mozzarella cheese and cook uncovered for an additional 15 minutes.

    2. my kids do not eat peppers no matter how many ways I try to add them… well… I cant say never. I am thinking I will still like to use these for my son’s bithday party as we usually have plenty of adults.

    Super adorable and totally original! If only my family would eat stuffed peppers….ahh….I’m the only one who likes, but maybe if I put a dip of some sort in them instead?? They do like veggies/dip. Thinking of hosting a party after trick or treating and I think these would be super cute – thanks for sharing!!!
